One of my favorite hotels in the world is the Royal Palms Resort and Spa (602-840-3610; royalpalmshotel.com), near Scottsdale, Arizona. The first time I visited, eight years ago, the area reminded me of the south of France, where I am originally from. Then I learned that Delos Cooke, who built the Royal Palms as a private estate in the early 1920s, traveled extensively in southern France and Spain. The entire hotel has a wonderful Mediterranean feel. Inside, it is filled with many delightful finds from his journeys. It's also a rare place that doesn't try too hard. I've been a guest for many years, so the staff recognizes me; they know that when I arrive, I head straight to its fabulous restaurant for a glass of Chardonnay and some paella, which is delicious.
